Bacon Hugged Asparagus
It's asparagus season, which means that you'll likely see loads of fresh spears ready for the grabbing at your local farmers market. And grab you must. This fresh and easy dish works as a stunning appetizer or side.
Bacon Hugged Asparagus
1-2 bunches asparagus spears, ends trimmed
16-20 slices natural bacon (I love the bacon from Rowe Farms)
Himalayan pink salt, to taste
Freshly ground black pepper, to taste
Avocado oil, for drizzling (or olive oil)
Preheat oven to 400, line a baking sheet with foil and place a drying rack on top of the sheet. Wrap a piece of bacon around 1-3 asparagus spears and place on sheet. Season with pink salt and pepper, and drizzle with avocado oil. Roast for 10 minutes on each side.
