Parsley Beet Hash
I want to spiralize everything that I see. This is getting ridiculous. But it's so easy, and so much fun. Here's the latest in my growing coterie of paleo and vegan spiralized delights.
Parsley Beet Hash
2 tablespoons olive oil
3-5 medium beets, peeled and spiralized
2 tablespoons chopped fresh parsley
1/2 teaspoon dried sage
Sea salt and freshly ground black pepper, to taste
Heat the oil in a large skillet over medium heat. Sauté beet strings for 1-2 minutes, stirring gently. Add parsley, sage, salt and pepper and sauté for another 3-5 minutes.
