It's spring, but tell that to winter. The days are still way crisper than they should be, meaning that Old Man Winter will hang on until the frigid, bitter end. That's where this unbelievable grain-free comfort dish comes in. It will take you from chilly to cozy in three seconds flat. This recipe was inspired by "Slow Cooker Chicken + Gravy" from Nom Nom Paleo: Food for Humans by Michelle Tam and Henry Fong.
2 tablespoons ghee
3 large leeks, chopped (white and light green parts), soaked in a bowl of filtered water for 30 minutes, and drained
6 garlic cloves, minced
1 teaspoon tomato paste
Sea salt, to taste
Freshly ground black pepper, to taste
1/2 cup natural chicken stock
1 teaspoon coconut aminos
1 (4 lb) natural whole chicken, patted dry with paper towels
1 tablespoon poultry seasoning (I love the Kirkland brand Rustic Tuscan seasoning from Costco)
Melt ghee in a large preheated skillet. Cook leeks and garlic for 1-3 minutes, then add tomato paste and stir. Season with salt and pepper, and simmer for 8-10 minutes. Add the chicken stock and coconut aminos and stir for 1 minute, and transfer everything to a slow cooker. Season chicken generously with salt, pepper and poultry seasonings. Place chicken in a slow cooker and cook on low for 6-8 hours. Transfer chicken to a platter, tent with foil and let rest for 20 minutes. With an immersion blender, blend the liquid and veggies into a smooth gravy. Serve chicken with gravy. All is right with the world.
