Heartberry Ice Cream
For my first paleo Valentine's Day, I wanted to make a special treat. You know, something to placate my sugar-deprived taste buds amidst the mountains of candy hearts and boxed chocolates out there. This incredibly creamy and satisfying sugar-free ice cream recipe was inspired by Nom Nom Paleo's "Strawberry Banana Ice Cream" from Nom Nom Paleo: Food for Humans.
Heartberry Ice Cream
4 frozen bananas
2 cups frozen sliced strawberries (I bought mine fresh, sliced them and froze them overnight)
1 cup coconut cream (scraped off the top of a refrigerated can of full-fat coconut milk)
2 teaspoons vanilla
Mix all ingredients in a food processor until smooth (you may have to do in 2 batches). Pour into an ice cream maker and follow manufacturer instructions. Serve immediately, or freeze until ready to serve and let thaw for 15-20 minutes. Press a piece of parchment paper on top of the ice cream before freezing to prevent freezer burn.
