Mocha Mousse
Dessert Attacks. You can't control when or how swiftly they strike. I might be going about my day dutifully snacking on carrot sticks and apple slices, when BAM. I get struck by a chocolate lightning bolt. Dessert Attacks generally refuse to be ignored, but those of us who adore paleo living aren't going to dive into the nearest box of bonbons. Oh no. We've worked too hard (and feel too good) for that. So what do we do? We make new desserts that taste just as good as the old ones, without wheat or sugar. This clean confection was inspired by "Instant Mocha Mousse" from Paleo Desserts by Jane Barthelemy.
Mocha Mousse
1.75 cups coconut cream (scraped off the top of a refrigerated can of full-fat unsweetened coconut milk)
2 tablespoons Just Like Sugar
1 tablespoon Lucuma powder
1 tablespoon coconut oil
1 teaspoon vanilla
2 tablespoons natural cocoa powder (or pure cacao powder)
1 tablespoon brewed decaf coffee (or 1 teaspoon decaffeinated coffee crystals)
1 teaspoon cinnamon
1 avocado, peeled and pitted
In a food processor, mix all ingredients except the avocado. Add the avocado and mix until smooth. Serve immediately or refrigerate until ready to devour.
