Moose Nog
In honor of the holiday season, here's a paleo version of traditional eggnog without sugar or heavy cream. It's a heartwarming (and clean!) way to toast family gatherings, Christmas movies and roaring fires.

Christmas Vacation Moose Mugs
4 cans unsweetened (full-fat, not lite) coconut milk, divided
1 cup Just Like Sugar
2 vanilla beans, sliced lengthwise and insides scraped (or 2 teaspoons vanilla extract)
2 rounded teaspoons nutmeg
2 tablespoons grade B maple syrup (optional)
12 egg yolks
Cinnamon, for garnish
In a food processor or blender, mix 2 cans of coconut milk with the Just Like Sugar, vanilla, nutmeg, syrup, and egg yolks until smooth. Transfer to a Dutch oven or large stockpot, add remaining 2 cans of coconut milk and keep warm on extremely low heat. Don't overheat, or the nog will start curdling. If that happens, just purée in the blender. Pour in a moose mug and sprinkle with cinnamon. Or, when the nog is finished, store in the refrigerator and serve chilled.
