Nut-Kissed Banana Bread
Since I can't stand throwing out overripe bananas, I'm on the constant prowl for new ways to use them. This recipe is a fun, grain-free way to make the most of nay-nays that are past their prime. It was inspired by Civilized Caveman’s Paleo Banana Bread. I used peanut butter (which, of course, is not paleo) because it's my husband's favorite food and I wanted to rack up some spouse points.
Nut-Kissed Banana Bread
3 bananas, mashed
4 large cage-free brown eggs
1/2 cup natural peanut butter (or almond butter)
4 tablespoons melted ghee, plus more for pan
1/2 cup coconut flour
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
Pinch Himalayan pink salt
Preheat oven to 350. In a food processor, mix bananas, eggs, peanut butter and ghee.
Add coconut flour, cinnamon, baking soda, baking powder, vanilla and salt, and mix.
Grease a glass loaf pan with ghee. Pour batter in pan and bake for 55-58 minutes. Remove banana bread from oven, let cool and invert onto a wire rack to cool completely.
