Until a few days ago, I didn't even know that it was possible to make paleo biscuits. We're talking about the ultimate of oxymorons, which is kind of awesome. It makes tackling something like this all the more gratifying. This recipe was inspired by "Basic Biscuits" from Paleo Comfort Foods by Julie and Charles Mayfield.
6 egg whites, whisked until frothy (I used natural cage-free brown eggs)
1/4 cup coconut flour
3/4 cup almond flour
1 teaspoon baking powder
1.5 tablespoons cold ghee (or organic unsalted butter)
Pinch of sea salt
Mix the nut flours and baking powder in a medium bowl and fold in ghee with a knife, breaking down the butter into small bits. Add the salt and combine (mixture will be crumbly), and refrigerate the flour mixture for 20 minutes. Preheat oven to 400. Gently fold egg whites into flour mixture and combine well. Form batter into 6 biscuits and bake on a nonstick cookie sheet for 15-17 minutes.
