Ok. I had never even heard of quinoa greens until I saw the Chiwa Gardens stand at the Uptown Market. My excitement about discovering a new locally grown green was massive. Not only are quinoa greens super delicious and simple to make, they're loaded with calcium, phosphorus, iron and potassium. I'm not sure where you can buy them (other than the market on Thursdays), but it's worth asking around. You can also try growing your own.
1 bunch french quinoa greens
1 tablespoon olive oil
2-3 cloves garlic, finely chopped
1 small shallot, diced
Sea salt and freshly ground black pepper, to taste
In a preheated skillet over medium-low heat, warm the olive oil. Add the garlic and shallot and sauté for 1 minute. Add quinoa greens and sauté for another 2-4 minutes. Season to taste.
