Cauli Me Alfredo
Are you tired of marinara or pesto and ready to try a vegan white sauce made from whole ingredients? This could be the answer.
Cauli Me Alfredo
One 10-oz package frozen cauliflower (or 1 large cauliflower, roughly chopped)
1 small onion, diced
3 cloves garlic, diced
2 cups water
2 cubes Not-Chick’n bouillon
1/2 cup raw cashews
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
Place all ingredients in a large pot. Cover and simmer for 20 minutes or until cauliflower is tender. Transfer to a blender and blend until creamy. Add more salt or pepper to taste. Pour over noodles of choice with vegetables.
