Cowgirl Kale Salad
In honor of New Year's Eve, here's a very simple but hearty raw and vegan kale salad that beautifully accompanies any meal. This has been one of my side dish standbys for a long time. Not only does it look great on a plate, it makes you feel like a million bucks — and it lasts in the fridge for a day or two. Wishing you a very happy and healthy 2015!
Cowgirl Kale Salad
1 large bunch fresh kale, rinsed, stemmed, torn into bite-size pieces and patted dry (or dried in salad spinner)
3 tablespoons Vegenaise (or other vegan mayonnaise)
1/2 teaspoon apple cider vinegar
1/2 teaspoon dried dill
1/2 teaspoon dried parsley
1/2 teaspoon sea salt
Place kale in a large bowl and set aside. Combine remaining ingredients in a small bowl until smooth. Pour dressing over kale and massage with your hands until the entire salad is saturated.
