Slow Spiced Pork
Sometimes you just want to throw a bunch of ingredients in a slow cooker in the morning and forget about them until dinner. You know how that goes. This grain-free recipe, inspired by "Cumin Spiced Pork Tenderloin with Root Vegetables" from Practical Paleo by Diane Sanfilippo, is an excellent wake-and-make meal. I made some modifications and cooked the pork in a slow cooker instead of the oven.
Slow Spiced Pork
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon garlic powder
1 teaspoon sea salt
Freshly ground black pepper, to taste
1 (2-3lb) boneless pork loin, patted dry with paper towels
2 tablespoons bacon fat
1 medium white onion, quartered
2 sweet potatoes, peeled and cubed
3 cloves garlic, minced
1 orange, peeled and segmented
In a small bowl, mix the cumin, coriander, garlic powder and salt. Pat the spice mixture on all sides of tenderloin. Heat the bacon fat in a large skillet over medium heat and sear the pork for 2 minutes per side. Place the sweet potatoes in a slow cooker and top with onion and garlic. Add the pork loin and top with orange segments. Cook on low for 8 hours.
