Berry Smash Scones
It’s a whole new year, which seemed like a good time to try a whole new recipe. I’ve never made scones. My daughter helped me the whole way through, which was a perfect way to celebrate a very rainy New Year’s Day. This recipe is inspired by The Complete Baking Cookbook for Young Chefs from America’s Test Kitchen.
Berry Smash Scones
1 cup frozen berries
1 T powdered sugar
1 1/2 C flour
6 T butter, cubed
2 T sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1 egg yolk
Preheat oven to 425 and line a baking sheet with parchment paper. Mix berries and powdered sugar in a medium bowl, then freeze until later. In a food processor, pulse flour, butter, sugar, baking powder and salt. Transfer mixture to large bowl and fold in frozen berry mixture. Transfer dough to floured counter, mold into a ball, and flatten into an 8” circle (about 3/4” deep). With a bench scraper, slice into 8 equal pieces and transfer to baking sheet with a spatula. Bake 14-15 minutes and cool on a wire rack.
