Rainbow Flatbread
We share this recipe, which was inspired by “Making a Meal for a Unicorn” by Ruth Owen, on behalf of Pride New Albany.
Rainbow Flatbread
1 tube store-bought pizza dough
Rainbow veggies (bell peppers, corn, green beans, red onion, cherry tomatoes, broccoli, squash, etc.)
3/4 cup ricotta
1 cup shredded mozzarella
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
Preheat oven to 400. Roll out dough in a rectangle and place on a baking sheet lined with parchment paper. Mix cheeses and seasonings in a small bowl then spread the mixture onto dough with a spatula. Layer the veggies on top in a rainbow pattern and bake for 12-15 minutes.
