Butternut Squash Chips
This is such fun to try if you love squash but are tired of preparing it the same way.
Butternut Squash Chips
1 medium butternut squash
1 tablespoon olive oil
Sea salt
Preheat oven to 375 and line a baking sheet with parchment paper. Pierce squash with fork, trim ends and microwave for 3 minutes. Peel and cut in ultra thin slices using a mandoline. Toss the slices with oil and salt then place on baking sheet. Bake for 20-25 mins, and be sure check frequently.
