Here’s a fun and savory twist on roasted pumpkin seeds.
Everything Bagel Pumpkin Seeds
Fresh pumpkin seeds, rinsed
Salt
4 tablespoons unsalted butter, melted
2 tablespoons everything bagel seasoning
Preheat oven to 250. Boil the seeds in a pot of salted water for 10 minutes. Drain and pat dry. Mix seeds, butter, and seasoning in a large bowl and spread out on a large baking sheet (I lined mine with parchment paper). Roast seeds for around 40 minutes. Once they turn a nice golden brown, increase heat to 325 and roast another 5 minutes. Turn off heat and let seeds cool/dry in the oven before taking them out to cool completely. Store in an airtight container.
