Granola Cups
1 ripe banana, mashed
2 tablespoons honey
1 teaspoon vanilla
1/4 teaspoon sea salt
1 teaspoon cinnamon
2 cups rolled oats
1/2 cup chopped nuts
Yogurt, for filling
Berries, for topping
Whisk banana, honey, vanilla, salt and cinnamon, then add oats and nuts and mix. Press mixture into the bottom and sides of cups in a mini muffin tin. Refrigerate for a couple hours, then bake at 325 for 20-24 minutes. Let cups cool and remove from tin. Fill with yogurt and top with berries.
