Peppermint Bark
40 oz bittersweet milk or dark chocolate chips (or a combination of both)
¼ teaspoon peppermint extract
40 oz white chocolate chips
15 large candy canes, crushed in a large plastic bag with a mallet
Line two large baking sheets with parchment paper. In a double boiler, melt the milk/dark chocolate and add the peppermint extract. Pour into both baking sheets and spread flat with a spatula. Let cool slightly (15-30 minutes; do not refrigerate). Clean double boiler, melt the white chocolate and pour/spread on top of the dark chocolate layer. Immediately sprinkle with crushed candy cane pieces. Let bark set completely (do not refrigerate), this will take around 4 hours. Break or cut bark into segments and store in baggies or sealed containers.
Note: This recipe makes a lot of bark! Enough for you to enjoy and share with friends and neighbors.
