Kiss My (Cauliflower) Grits
Okay. When I served this "grits" with dinner the other night, my husband thought it was a grain. I swear to you. When I told him it was cauliflower, he didn't believe me. It's that good (and filling). If you follow a grain-free lifestyle but crave something carb-y, or if you're simply looking for a new healthy vegan side dish, please give this a whirl. It's inspired by "Paleo Grits" from Paleo Comfort Foods by Julie and Charles Mayfield.
Kiss My (Cauliflower) Grits
1 huge head of cauliflower, riced in a food processor
1 cup almond flour
3 cups natural vegetable (or chicken) stock
Sea salt and freshly ground black pepper, to taste
Mix cauliflower, flour and stock over medium heat in a Dutch oven or large stockpot. Reduce heat to medium low and simmer for 25 minutes, stirring periodically, until a lot of the liquid is absorbed. Drain excess liquid in a fine mesh strainer (you can press lightly to squeeze out more liquid). Return to pot and heat on low. Season with salt and pepper when ready to serve.
